“I’m not a good waitress,” Waseem Ahmed said as he precariously set a full glass of water in front of me, “but I can cook.” Ain’t that the truth. I found that out for myself when Ahmed served me masala chai, black tea simmered for nearly half an hour with milk and spices. Ahmed’s spice blend includes cinnamon, nutmeg, cardamom and cloves — a mix that reminded me of my grandmother’s pumpkin pie every time I took a sip.
